The Mad Hatter's Tea Sandwiches from Alice in Wonderland - Book 1, Chapter 2

When Alice arrives in Wonderland, she meets a variety of whimsical characters. However, there is truly no one as crazy---or perhaps mad---as The Mad Hatter himself in all of Wonderland. And while his afternoon teas may be chaotic, the food is surprisingly delicious. I can imagine him having perfectly flaky scones with fresh strawberry jam and clotted cream, and dipping a crisp biscuit in his tea. Amongst this slew of food, I also envision a set of assorted tea sandwiches.

Here I've listed recipes for three different types of "tea sandwiches". They aren't conventional English afternoon tea staples, but are sandwiches that are delicious enough to have a place on the Mad Hatter's table.
White Bean "Tuna" Sandwich:
Ingredients
One 255g can of white beans
1/2 red onion, minced
1 sheet of nori, crumbled
3 tbsp vegan mayonnaise
1 clove garlic, crushed
1 tsp parsley, finely chopped
1 tsp cilantro, finely chopped
2 tsp salt
1 tsp smoked paprika
1 tsp dried dill weed
1 tsp black pepper
4 slices of white bread
Instructions:
Prepare the ingredients by draining the can of white beans, mincing the onion, crushing one clove of garlic, and chopping the parsley and cilantro.
Add the white beans to a bowl and mash them with a fork or potato masher. You don't want a puree, but rather a rough mixture of beans that mimics the chunky texture of tuna.
Add the crushed nori, mayonnaise, parsley, cilantro, garlic, onion and seasonings to the bowl and mix with the beans until just combined
Cut the crusts off of 4 slices of white bread and scoop the bean filling between two slices of bread.
Cut the sandwich into bite-sized pieces and enjoy!
"Egg" Salad Sandwich:
Ingredients
1 block super-firm tofu, shredded
250g silken tofu
4 oz chives, sliced
2 oz parsley, chopped
1 clove garlic, crushed
3 tbsp nutritional yeast
2 tsp kala namak (add more if necessary)
0.5 tsp black pepper
1.5 tsp turmeric
4 slices white bread
Instructions
Shred 1 block of super firm tofu using a cheese grater and add it to a bowl with silken tofu. Mix the two until a slightly wet texture that mimics scrambled eggs is made. Add more silken tofu if the mixture is too dry.
Add the chopped parsley, crushed garlic, sliced chives, nutritional yeast, kala namak, black pepper, and turmeric.
Mix the ingredients together until the filling is a light yellow color. If it is too white, add more turmeric.
Cut the crusts off of four slices of white bread and scoop the filling between two slices of bread. Cut into bite-sized pieces and enjoy!
Japanese Fruit Sando:
Ingredients
13.5 fl oz coconut heavy cream
4 tbsp sugar
1 tsp vanilla extract
Strawberries or fruit of choice
4 slices of white bread
Instructions:
In a glass bowl, add the coconut cream and whip until soft peaks form. When soft peaks form, slowly add the sugar and vanilla. Continue to whip until stiff peaks are formed.
Cut the crusts off of 4 slices of white bread.
Add a layer of whipped cream to the base of a slice of white bread, and place 2-3 strawberries on the cream. Cover the strawberries completely with the whipped cream and add another slice of bread to close the sandwich.
Wrap the sando in plastic wrap and refrigerate for 20 minutes.
Cut the sando down the middle to reveal the cross-section of the strawberries, and enjoy.
